This weeks “Recipe of the week” is Crockpot Shredded Chicken. For us clean eaters this is a great way to spice up the plain old grilled chicken. Slow cooking chicken breast drizzled in organic barbeque sauce topped with salt free seasoning is definitely the way to mix things up a bit in your meal prep. Give it a shot… you won’t be disappointed!
Recipe & Cooking Instruction:
- 6-8 Boneless chicken breasts (about 3-4lbs)
- Put in crockpot
- Add 1/4-cup water, ½ cup of stubbs barbeque sauce and a bunch of Mrs. Dash seasoning (I mix different flavors together).
- Cook on high for 5 hours or on low 8 hours
When done, there will be a lot of liquid in pot. Leave this; take 2 knives or forks and shred chicken right in pot in the liquid (Will look like pulled pork). Liquid will reabsorb as you stir and shred.
Keep it in fridge, use franks sauce, trader joes red chili sauce, avocado oil, whole foods 365 peanut sauce or stubbs spicy bbq (or sauce of your choice) In this example I sliced both green and yellow squash and added them to the crockpot half way through (great flavor)!
